[Hometown Specialty Product Project: We're revealing our best recipes! ~Nakashi Rakuza-do Edition~]

"We are showcasing two recipes created by Rakuzo, a creative izakaya in Namegata City, for tomorrow's home match against Kofu, which is Hometown Days ""Namegata Day""! This follows our hometown specialty product project ""Revealing Our Proud Recipes!"" that we held during the home match against Niigata on May 4th. The first dish is ""Namegata City Spring Cabbage Steak with Parmesan Style."" First, cut the cabbage in half, make an incision in the core, and heat it in the microwave for 1 minute.

Next, put minced garlic in olive oil, and when bubbles appear, add bacon and stir-fry over high heat.

Then, add the cabbage and grill until both sides are browned, then remove the bacon. After that, add heavy cream to the frying pan, season with salt and pepper, add Parmesan cheese, and simmer for about 1 minute. Be careful not to reduce the heavy cream too much at this time.

Finally, bake in an oven at 200°C until desired browning, then transfer to a plate, top with sauce and bacon, and it's done! Approximately 5 minutes in the oven should be sufficient.

If you don't have an oven at home, you can also place the cabbage on aluminum foil and brown it in a toaster! The second dish is ""Fried Sardines and Shiso with Namegata City Green Onions and Yulinji Sauce.""

First, season filleted sardines with salt and pepper, layer shiso leaves on top, and dust with potato starch. Then, wrap with green onions, secure with toothpicks, and dust with potato starch again. It's a good idea to dust the green onions with potato starch as well.

Next, deep-fry in oil at 180°C until the bubbles become fine. The key is to shake off excess potato starch before frying!

For the Yulinji sauce, try mixing soy sauce, sake, mirin, sugar, sesame oil, garlic, ginger, doubanjiang, and chicken stock to your liking. Plate and serve!

The green onions help to remove the unique fishy smell of sardines, making them delicious. By the way, the Yulinji sauce is the restaurant's secret recipe, so everyone, please try to figure out the quantities yourselves! Namegata City, our hometown, boasts delicious vegetables and meat.
