◆Namegata City "Tomato Shio Koji" (Tomato Salt Koji) from Midori to Kaze no Noen
The answer to the question "Can we make a processed food with umami-rich tomatoes?" was "Tomato Shio Koji." The tomatoes are organic, with no additives whatsoever, and homemade rice koji is used with crystal rock salt. The acidity and sweetness of the tomatoes, combined with the salt koji, resulted in a versatile seasoning with a Japanese flair that goes well with various dishes.
